According to ancient folklore, Christmas food is sacred, especially Christmas bread. There used to be big bakes at Christmas, because the bread would be enough for both the people on the farm and the poor in the village. The ingredients for the bread came from different grains depending on the local climate in different parts of Sweden. Wheat was preferentially grown in southern Sweden, and in Dalarna the most common grains were barley and oats, with rye in the southern part. Therefore, wheat flour was an ingredient used only for festive occasions in Dalarna. As in the past, we bake our Christmas chrispbread just for Christmas. It is made with wheat flour, whole grain rye and the Christmas spices anise, fennel and coriander. Try a piece with some Christmas ham and mustard. Can it taste more like Christmas?
